Ready to start production in St Andrew’s
INDEPENDENT Scottish distiller Eden Mill has taken the next step towards opening its distillery as its new wash and spirit stills have been installed.
The two hand-crafted copper stills were manufactured by Speyside firm LH Stainless and designed in collaboration with Eden Mill head distiller Scott Ferguson. The firm said it will be able to achieve a light, floral and grassy new make similar to what was distilled back in 2014 on the original stills.
Ferguson said he chose the stills to help produce a lighter and sweeter spirit, with an onion shaped wash still that can contain 15,000 litres, the boil-ball spirit still at 11,500 litres and the shell-and-tube condenser, all of which were picked by the head distiller.
Commissions for the new make spirit are set to begin in March this year and will kick off the process of fine-tuning the new make spirit before filling the first casks at the distillery.
The new distillery is located just seven minutes from St Andrews and is set to open its doors to tourists summer 2025 and will offer immersive tours, a shop as well as a third floor cocktail bar.
Eden Mill also said the distillery has been built with sustainability at its core, which saw the distiller team up with Scottish biotech firm MiAlgae to recycle whisky effluent – a by-product of whisky making – into micro-algae, offering a rich source of Omega-3 without the need to rely on wild fishing.
