Single malt marks new limited release from Eden Mill

INDEPENDENT Scottish distiller Eden Mill has unveiled its latest limited edition dram with the new Art of St Andrews 2025 single malt.
Marking the latest annual limited release from the brand, the new 2025 edition takes inspiration from Eden Mill’s beginnings. Long before the spirit of the brand flowed, Eden Mill launched as a brewery with its first ever beer, The Clock, made with Brown Crystal Malt and was an instant success, according to the distiller.
Determined to translate this taste for its 2025 release, head distiller, Scott Ferguson, began an experiment back in 2018 with the malt. He distilled the same Brown Crystal malt and laid it down in first-fill bourbon barrels. Earlier in the year, in preparation for this release, the whisky was re-racked into Amontillado sherry casks to impart a final sophisticated, nutty taste.
And to capture the spirt of this journey, Eden Mill has worked with local artist Deborah Phillips to create a bespoke and vibrant artwork for the 2025 bottle and presentation box.
Tasting notes for the new dram have been described as:
Nose:Â A comforting aroma of malty toasted biscuit sweetness alongside notes of freshly baked bread.
Palate:Â Rich layers of creamy, nutty sherry, reminiscent of almond frangipane.
Finish:Â A delicate transition to cherry sweetness with a final whisper of spice.

Ferguson said: “This release is particularly special to us – the Brown Crystal malt is a nod to our first ever beer and we’re toasting to our new home on the estuary.
“The Amontillado finish provides that perfect nutty balance to the malt’s natural sweetness. The tasting profile is perfect for the celebratory season – rich, decadent and warming.”
