St Andrews distiller kicks off cask bottlings series
INDEPENDENT Scottish distillery Eden Mill has kicked off its new series of rare single cask bottlings with its new Eden Mill Pedro Ximénez Single Cask.
The expression has taken on the deep, dark brown sherry colour in the liquid after almosmt nine years spent ageing in a PX cask. The resulting dram has been described as “burst with rich flavours”, including fig and raisin, with an underlying note of oak and red berries.
Exclusive to the Eden Mill website as well as the distillery’s store in St Andrews, the new release comes bottled at cask strength at 58.3% ABV and is limited to just 252 bottles.
Avid whisky fans can get their hands on this highly exclusive bottle now, at a price of £110 making it a truly indulgent opportunity for gifting or as an extra self-treat this Christmas season.
This rare bottling comes as Eden Mill continues to gear up for the opening of its new distillery, which is located just seven minutes away from St Andrews and will open its doors to the public in spring 2025.
