A PERTHSHIRE-based distillery has launched what it claims is the first ever spirit made from botanicals sourced in local woodlands.
Highland Boundary’s Birch and Elderflower Wild Scottish Spirit, which is inspired by Perthshire’s ‘big tree country’, was created by co-founders Marian Bruce and Simon Montador, who own a farm near Blairgowrie.
The pair worked with researchers from Heriot-Watt University to create the spirit, investigating ways of maximising flavour and consistency.
