Lazy Day NPD taps into bakery trends

Free-from bakery brand Lazy Day has expanded further on its line-up of treats with the introduction of two NPD for consumers.

SCOTTISH free-from bakery brand Lazy Day has unveiled a duo of NPD to tap into the rising demand for more convenient treats suitable for those with dietary restrictions.

Hand-baked in the firm’s dedicated gluten-free, milk-free and egg-free bakery, Lazy Day has rolled out its new Cornflake & Honeycomb Tiffin as well as a four pack of Chocolate & Vanilla Cake Bars.

The new Cornflake & Honeycomb Tiffin combines a rich Belgian dark chocolate tiffin with crumbly biscuit and honeycomb pieces that is then topped with a crunchy layer of caramel-coated cornflakes.

Meanwhile, the new Chocolate & Vanilla Cake Bars build on the brand’s line-up across Tesco stores with a soft chocolate sponge that is layered with a smooth vanilla flavour frosting on top that is then coated in Belgian dark chocolate.

The development of the new Cornflake & Honeycomb Tiffin has come in response to the demand for crunchier textures across bakery and confectionery, says Lazy Day, with consumers being increasingly drawn to those products that offer contrasting textures, particularly the combination of something rich in flavour with a soft texture or crunchy finish.

Similarly, Lazy Day said it sought out this texture demand for its new Chocolate & Vanilla Cake Bars, while also offering consumers an instantly recognisable cake bar pairing on the shelves. This new variant will also sit alongside the brand’s Belgian Chocolate Cake Bars to help build greater choice for consumers.

Dr Sally Beattie, co-founder at Lazy Day, said: “Free-from has changed enormously since we started Lazy Day 20 years ago. Shoppers quite rightly expect much more from the category today, and those expectations continue to inspire us when we’re developing new products.

“It’s not enough for something to simply meet a dietary requirement. Flavour, texture and the overall eating experience have to be at the forefront too.”

Co-founder Emer Bustard added: “Seeing these new products launching with two of the UK’s major retailers is a really exciting moment for us. We’ve grown significantly from where we started, developing recipes in our own kitchens and selling our first bakes at farmers’ markets, but we’ve always been very clear about what we want Lazy Day to stand for.”
