Iconic sauce brand controversially contradicts itself in claims its sauce should be put on toast first

The manufacturer is launching bottles of its famous sauce with instructions that actually clash with its own recipe for cheese on toast.

Lea & Perrins’ Thiago Rapp, the firm’s ‘director of taste elevation’, has now announced that if toasted cheese fans are garnishing the melted cheese with their condiment, they’re doing it wrong. According to the sauce experts, the tangy condiment must be applied to the bread before the cheese is added in order to caramelize the toast. 

“‘For 190 years we’ve known where the sauce belongs — directly on the toast,” he said. “Our new label is a reminder of toast, then sauce, then cheese. This isn’t a new trick. It’s the original one. We just forgot to mention it.”

However, on Lea & Perrins’ website, its recommended recipe for cheese on toast is completely different. It suggests that to make its ultimate cheese on toast; pale ale, wholegrain mustard, an egg yolk, flour, butter, double cream, Lea & Perrins Worcestershire sauce and, of course, cheese, should be mixed into a thick sauce before being poured over sourdough bread.

Lea & Perrins’ research found 85 per cent of Brits love tucking into cheese on toast, while 58 per cent of those who put the sauce on last said it often spills off the sides. Meanwhile four in ten preferred it with Worcestershire sauce.
