Bakery firm takes flavour from cup to cake

BAKERY goods manufacturer Finsbury Food Group has expanded its Little Big Cake range with the launch of a strawberry/matcha-flavoured cake.

Inspired by matcha lattes, which have been taking coffee shops and social media feeds by storm, this new cake has been developed with millennial and gen z consumers in mind.

The cake, called I Like You Berry Matcha, stands taller than a traditional celebration cake, with the four-layer, five-inch diameter cake having a narrower profile inspired by the shape of a matcha take-away cup. It features alternating vanilla and pink sponge, and is layered with strawberry jam as well as matcha, white chocolate and strawberry frosting, finished with a dusting of matcha powder.

Weighing 970g, serving up to 12 people and available with an RRP of £16, Finsbury says the cake is a ‘matcha’ made in heaven for birthdays, get-togethers and smaller celebration moments.

The launch exclusively into Tesco from Finsbury Food Group aims to fill a gap for shoppers who may have outgrown traditional character cakes but still want something colourful, contemporary and worthy of a place on the grid. As matcha continues its evolution from a Japanese ritualistic ingredient to a mainstream trend, Finsbury is giving more shoppers the chance to discover it in an accessible and joyful format.

Kimberley Curtis, brand manager at the bakery firm, said: “Finsbury’s own brand, Little Big Cake, gives us the freedom to look at what’s happening across food culture and turn those trends into something that’s never been done before.”

Ross Lowrey-Heywood, innovation development manager at Finsbury, added: “Matcha is no longer a niche ingredient. It has become one of the biggest coffee shop trends of the moment, embraced for its flavour, colour, ritual and unmistakable aesthetic. Coffee shops have been leaning into cake for some time, so it felt only right that cake should lean into matcha.

“With this cake, we wanted the individual flavours and colours to stand out. It’s vibrant, playful and completely different from anything else in the supermarket cake aisle. We’ve taken the matcha trend and reimagined it as a celebration cake and we think shoppers are going to like it very matcha!”
