ORKNEY-based oatcake producer Stockan’s says the bere barley used in its new Stockan’s Orkney Beremeal Oatcake offers significant nutritional benefits – a commercial opportunity in increasingly health-conscious times.
It’s known as the 90-day barley due to its ability to ripen where long daylight hours create a short growing season.
Business development manager Moira Cairns said: “Research conducted by Queen Margaret University’s Scottish Centre for Food Development and Innovation showed that oatcakes made with beremeal have a high fibre content and offer a useful range of micronutrients containing high levels of vitamin B1, folate, iron, biotin, phosphorous, magnesium and iodine.”
